Palfuoco
Palfuoco is a cheese made from pasteurized cow’s milk, inoculated with lactic ferments and a suspension of selected Penicillium spores and yeasts. During maturation, strains of Penicillium develop, creating the characteristic blue-green veining typical of this family of cheeses.
Thanks to the addition of chili pepper, it acquires a pleasant spicy flavor.
