Our dairy is a modern facility that uses the most advanced technologies while respecting the great dairy tradition of Novara. We pay the utmost attention to every stage of production: from milk control and selection to manufacturing.

STARTING FROM THE MILK...
Gorgonzola is made from whole pasteurized cow’s milk, to which a lactic ferment and Penicillium spores are added (basically, these are molds that feed inside the wheel).

...UNTIL THE FINAL WHEEL
The production process is quite long and complex, involving several steps. After at least 60 days, the product is ready, but after 90 days, it reaches the excellence of flavor.
The STRACREMOSI
In addition to gorgonzola, Palzola’s production has expanded over time to include new products that have gained increasing popularity with the public, such as the ‘stracremosi,’ gluten-free creams with 72% pure Palzola goodness and the addition of noble cream Elena.
ANDREA MAINARDI:Uattàa
Palzola has long associated its social media communication with the figure of Andrea Mainardi, the master of ‘Uattàa,’ a highly-followed chef who excels at interpreting and enhancing gorgonzola and other key products of the company with unique and creative recipes and proposals.
Sergio Poletti, 76 years old, is one of the leading producers of the most famous blue cheese in the world.
Today, he is supported by his son Giacomo, who has been the CEO since 2019.
Their company produces 150,000 wheels annually, which are distributed to large-scale retail and the best restaurants.
