Our dairy is a modern facility that adopts the most advanced technologies while honoring the great cheesemaking tradition of the Novara region.

RESPECTING NATURE

Since 2008, producing Palzola Gorgonzola has meant putting respect for nature first: a large part of the energy required for the various stages of production is generated by a modern 1,010 kW photovoltaic system with zero visual and environmental impact, located on the roof of our facility.

A UNIQUE GORGONZOLA

At Palzola, it’s important to highlight the clear difference between a cheese that follows standard industrial production rules and our Gorgonzola, which—as proven by the many awards it has received—aims to stand out on the market for its exceptional quality and prestige. This is the result of a shared commitment by everyone working at our facility, starting early each morning, where the milk is processed immediately and with great care to lay the foundation for a long and meticulous production process.

We are proud to say that more than 45 people currently work at Palzola, none of whom are employed on fixed-term, internship, or agency contracts. The average length of service at Palzola exceeds 15 years per employee.

A production process that is deliberately kept largely manual, thanks to teamwork where everyone knows that true excellence comes from collaboration. For several years, the company has followed a strict quality policy—not only in terms of hygiene and safety, process control, and standardization of the final product, but above all in honoring the traditional methods of a cheese with ancient origins: from manually filling the molds, to turning them, to cutting and wrapping the final product. All still done strictly by hand.

The true skill of the company lies in its ability to expertly blend the most advanced and refined technology with the oldest cheesemaking techniques and secrets.

Cutting-edge technologies are used exclusively to ensure food safety—through full supply chain traceability, protection of the designation of origin, authenticity of raw materials, hygienic processing, and everything that guarantees the safety and satisfaction of the final consumer.
Tradition, on the other hand, guides the entire creation of the Gorgonzola, still crafted entirely by hand, just as it was in the past—relying on the manual skills and cheesemaking secrets passed down orally from one generation to the next.

We pay the utmost attention to every stage of production—from the inspection and selection of the milk to the final processing.

Here, things are done properly, just like they used to be: and when technology is involved, it serves only to optimize and support—not only hygiene and safety—but a production process driven by one primary goal: quality.

INNOVATION & TRADITION

One prime example is undoubtedly the climate control system for the final aging rooms, which was specifically designed—at our explicit request—to recreate the same microclimatic conditions found in the caves of the Valsassina, where Gorgonzola wheels were originally aged.

Not all shops are the same

Recently, Palzola launched its e-commerce platform where you can purchase all our products with delivery across Italy. However, we also have a company store where you can find our full range of products as well as other local specialties.
